spicy Italian sausage
casings removed

olive oil

medium onion
diced

garlic cloves
minced

medium carrots
diced
2
celery stalks
diced

red pepper flakes
optional, for extra heat

chicken or vegetable broth

14.5-ounce can diced tomatoes

potato gnocchi
store-bought or homemade

baby spinach or kale
chopped

teaspoon
Italian seasoning
Salt and black pepper
to taste
Instructions
In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage, breaking it apart, and cook until browned.
Add onion, garlic, carrots, and celery. Cook until softened. Stir in red pepper flakes and Italian seasoning.
Pour in broth and diced tomatoes. Bring to a boil, then reduce to a simmer for 15–20 minutes.
Add gnocchi and cook according to package instructions until tender.
Stir in spinach or kale until wilted. Season with salt and black pepper to taste.
Serve hot, garnished with parmesan cheese
