- 1 pound spicy Italian sausage casings removed
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 garlic cloves minced
- 2 medium carrots diced
- 2 celery stalks diced
- 1 teaspoon red pepper flakes optional, for extra heat
- 6 cups chicken or vegetable broth
- 1 14.5-ounce can diced tomatoes
- 1 pound potato gnocchi store-bought or homemade
- 3 cups baby spinach or kale chopped
- 2 teaspoon Italian seasoning
- Salt and black pepper to taste
