Italian Sponge Cake

Ingredients
  

  • 8 eggs
  • 1 ½ cups flour
  • 1 ½ cup sugar
  • 4 teaspoons baking powder
  • 4 teaspoons vanilla extract
  • juice and zest from 1 lemon

Instructions
 

  • Pre heat oven to 350 degrees
  • Grease 2 eight inch cake pans
  • Beat eggs and sugar until light and double in volume
  • Add vanilla
  • Blend flour and baking powder together
  • Mix flour mixture into egg batter
  • Divide batter among the two cake pans
  • Bake for 30 minutes or until an inserted toothpick comes out clean
  • Cool completely
  • Layer with cream
  • Frost with with whipped cream frosting
  • Decorate with fresh berries and silvered almonds
