Ingredients
  

  • 12 oz pasta (rigatoni, penne, or orecchiette work best)
  • 1 lb. Italian sausage (mild or spicy, casings removed)
  • 8 oz mushrooms (cremini, button, or a mix), sliced
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1/2 cup dry white wine
  • 1 cup pasta water
  • 14 oz can crushed tomatoes
  • 1/2 cup grated parmesan cheese
  • 2 tsp. oregano
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish + grated parmesan

Instructions
 

  • Cook the pasta. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  • Brown the sausage. In a large skillet, heat olive oil over medium-high heat. Add sausage, breaking it up with a spoon, and cook until browned, 5–6 minutes. Remove and set aside.
  • Sauté the aromatics. In the same skillet, add onion and cook until softened, about 3 minutes. Stir in garlic and mushrooms; cook until mushrooms release their juices and begin to brown, 6–7 minutes.
  • Deglaze. Pour in the white wine, scraping up any browned bits from the pan. Simmer until reduced by half.
  • Make the sauce. Stir in crushed tomatoes, reserved sausage, thyme, salt, and pepper. Simmer for 10 minutes.
  • Finish with pasta. Add cooked pasta to the skillet, along with 1 cup reserved pasta water. Toss everything together until the sauce coats the pasta.
  • Serve. Stir in parmesan cheese, garnish with parsley, and serve hot.
