Ingredients
  

  • 1/2 Lb. fusilli.
  • 4 cups cauliflower florets
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1 Tbsp. minced garlic
  • 1/2 cup chopped onions
  • 2 cups milk
  • 1 cup pasta water
  • 1 cup parmesan cheese
  • 1 Tbsp. chopped Italian parsley
  • Salt and pepper to taste

Instructions
 

  • Start by cleaning the cauliflower and cutting into florets. Then boil the cauliflower in salted water until soft.
  • Remove the cauliflower and mash into a puree set aside while you make the sauce and cook the pasta according to package directions
  • In a saute pan over medium high heat in the olive oil and butter saute the onion and garlic until soft and translucent.
  • Add the milk and pasta water, return the mashed cauliflower back to the pan and cook an additional 5 minutes. Then add in the grated parmesan cheese.
  • Adjust your seasonings (salt and pepper) to fit your taste.
  • Plate, top with more cheese and chopped Italian parsley.

Notes

Reserve some of the pasta water before draining. Adding a little to the sauce helps create a smooth, creamy consistency and allows the sauce to cling beautifully to the pasta.
