eel and cut your potatoes into 1 -1 1/2 inch tall rounds
Use a small heart shaped cookie cutter to cut out heart shapes from each round. Or they can be left round shape. Use a potato peeler to smooth the edges of the the potatoes
Heat the oil in a skillet over medium high heat add the potatoes in a single layer and sear until golden brown on both sides ( about 4-5 minutes pre side)
Add the broth, garlic, thyme and butter to the pan.
Reduce the heat to medium low, cover and simmer 15-20 minutes, or until the potatoes are fork tender. Or they can be roasted in the oven in an oven proof skillet for 30 minutes in a 375-degree preheated oven.
