Ingredients
  

  • 2 lbs. Yukon Gold potatoes, cut into chunks
  • 1 cup thinly sliced red onions
  • 1/2 cup capers
  • 1 cup cherry tomatoes cut in half
  • 1 cup pitted kalamata olives whole or sliced your preference
  • 1/3 cup chopped Italian parsley
  • 1/3 cup torn fresh basil
  • 1 Tbsp oregano fresh or dried
  • 1 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • salt and pepper to taste

Instructions
 

  • Place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook until fork tender, about 12–15 minutes. Drain well.
  • While the potatoes cook, make the dressing directly in a large serving bowl. Add the olive oil, red wine vinegar, salt, black pepper, basil, capers, sliced red onion, parsley, and oregano. Stir everything together.
  • Add the warm potatoes to the bowl and gently toss until fully coated in the dressing.
  • Let the salad sit for at least 20 minutes before serving so the potatoes absorb all the flavors.
