- 2 lbs. Yukon Gold potatoes, cut into chunks
- 1 cup thinly sliced red onions
- 1/2 cup capers
- 1 cup cherry tomatoes cut in half
- 1 cup pitted kalamata olives whole or sliced your preference
- 1/3 cup chopped Italian parsley
- 1/3 cup torn fresh basil
- 1 Tbsp oregano fresh or dried
- 1 cup extra virgin olive oil
- 1/3 cup red wine vinegar
- salt and pepper to taste
Place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook until fork tender, about 12–15 minutes. Drain well.
While the potatoes cook, make the dressing directly in a large serving bowl. Add the olive oil, red wine vinegar, salt, black pepper, basil, capers, sliced red onion, parsley, and oregano. Stir everything together.
Add the warm potatoes to the bowl and gently toss until fully coated in the dressing.
Let the salad sit for at least 20 minutes before serving so the potatoes absorb all the flavors.
