- 1/2 cup of sugar
- 1/2 cup marsala wine
- A few lady fingers for topping
Prepare a Bain- Marie: In a heat proof bowl over simmering water add the egg yolks and sugar beating continuously.
Add the wine and vanilla continue beating until well blended and the zabaglione begins to thicken into a foamy custard
Put some fresh berries in a martini glass
pour the zabaglione over the berries, top with crushed lady fingers.
Whisk constantly while cooking over gentle heat and don't allow the bottom of the bowl to touch the simmering water. This keeps the egg yolks from scrambling and creates a smooth, airy zabaglione.
