Make the Dough
In a large bowl (or stand mixer):• Combine flour, remaining sugar, and salt.• Add eggs, vanilla, lemon zest, and yeast mixture.• Mix until combined.• Add softened butter and knead 8–10 minutes until smooth and elastic.• The dough should be soft but not sticky.
First Rise
Place in a lightly oiled bowl, cover, and let rise 1–1½ hours until doubled.
Shape the Rings
• Turn dough onto a floured surface.• Roll to about ½-inch thickness.• Cut circles using a 3-inch cutter.• Cut a small hole in the center (or use your finger to stretch gently).• Place on parchment squares.Cover loosely and let rise again 30–45 minutes.
Fry
In a deep fry pan Heat oil to 350°F (175°C).Fry 1–2 at a time, about 1–2 minutes per side, until golden brown.Do not overcrowd.
