Ingredients
  

  • 3 ripe but firm peaches chopped
  • 2 cups cherry tomatoes halved
  • 8 oz. fresh mozzarella pearls or chopped fresh mozzarella
  • 1/2 cup sliced red onions
  • 1/2 cup fresh basil, torn
  • Optional: arugula or mixed greens

For the Italian Vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp. honey
  • 1 small garlic clove, grated
  • 2 tsp Italian seasoning
  • Salt and black pepper, to taste

Instructions
 

  • Add the chopped peaches, cherry tomatoes, mozzarella, red onion, and basil to a large serving bowl.
  • In a small bowl or jar, whisk together the olive oil, red wine vinegar, honey, garlic, Italian seasoning, salt, and black pepper until fully combined.
  • Pour the Italian vinaigrette over the salad and gently toss to coat.
  • Let the salad sit for about 10 minutes before serving to allow the flavors to blend together.
  • Garnish with extra basil, flaky salt, or a drizzle of balsamic glaze if desired.265
