- 3 ripe but firm peaches chopped
- 2 cups cherry tomatoes halved
- 8 oz. fresh mozzarella pearls or chopped fresh mozzarella
- 1/2 cup sliced red onions
- 1/2 cup fresh basil, torn
- Optional: arugula or mixed greens
For the Italian Vinaigrette
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp. honey
- 1 small garlic clove, grated
- 2 tsp Italian seasoning
- Salt and black pepper, to taste
Add the chopped peaches, cherry tomatoes, mozzarella, red onion, and basil to a large serving bowl.
