Things o know about this roasted vegetable recipe

Customize the vegetables: Use any combination of seasonal vegetables you enjoy. Carrots, parsnips, sweet potatoes, Brussels sprouts, butternut squash, and other root vegetables all work beautifully in this recipe.

Add citrus zest: A little fresh lemon or orange zest adds brightness and a subtle holiday-inspired flavor that complements the honey and roasted vegetables.

Control the sweetness: If you prefer a less-sweet dish, reduce the amount of honey or add a small splash of balsamic vinegar when tossing the vegetables. The balsamic adds a pleasant tang that balances the natural sweetness.

Honey Roasted Holiday Vegetables bring warmth, beautiful color, and festive flavor to any holiday table.

Storage:
Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat:
Reheat in a 375°F oven for 10–15 minutes until warmed through. This helps the vegetables regain some of their roasted texture.

Notes

Cut all the vegetables into similar-sized pieces so they roast evenly. Don’t overcrowd the pan—spread them out in a single layer so they roast and caramelize instead of steaming. For the best flavor, drizzle the honey over the vegetables during the final 10–15 minutes of roasting to prevent it from becoming too dark.
