Layered Potato, Prosciutto and Cheese Slices

Layered Potato, Prosciutto and Cheese Slices are a simple Italian-inspired side dish made with thinly sliced potatoes, savory prosciutto, and layers of melted cheese. Crispy around the edges and tender in the center, this comforting dish is easy enough for a weeknight and elegant enough for entertaining.

Ingredients
  

  • 4 medium Yukon gold or russet potatoes thinly sliced
  • 6 thin prosciutto slices
  • 12 slices Swiss cheese
  • 2 Tbsp. olive oil
  • 1 tbsp. Italian seasoning

Instructions
 

  • Preheat your oven to 400 degrees. Grease a 9 inch baking tray with olive oil or butter.
  • Clean and peel the potatoes. Use a mandolin or slice the potatoes thin.
  • Arrange on the prepared baking sheet. Drizzle with the olive oil, sprinkle with the Italian herbs and prebake in the preheated oven for 10-15 minutes r until the potatoes are beginning to brown.
  • Carefully remove from the oven. Top the precooked potatoes first with prosciutto then with the Swiss cheese. Return to the oven and bake an additional 10-15 minutes, or until the cheese is melted.
