Italian Roasted Delicata Squash Salad with Creamy Sicilian Dressing

Roasting the Delicata Squash:

  • 1 delicata squash, scrubbed and sliced into ½-inch half-moons (skin on)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • 1 teaspoon fresh thyme or sage, chopped (optional)

Salad Ingredients:
