1 medium cauliflower, cut into florets

2 tbsp olive oil

Salt and pepper, to taste

1 tsp dried oregano

1 tsp dried thyme or rosemary (optional)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup Homemade Béchamel Sauce

Fresh basil or parsley for garnish

Béchamel Sauce

2 tbsp butter
-
2 tbsp all-purpose flour
-
1½ cups milk
-
Pinch of nutmeg

Salt and pepper, to taste

Instructions

Preheat the oven: 400°F (200°C).

Roast the cauliflower:

Toss cauliflower florets with olive oil, salt, pepper, oregano, and thyme.

Spread on a baking sheet and roast for 20 minutes until slightly golden.

Make the béchamel sauce
