Gnocchi Lasagna Soup

Ingredients

    • 1 pound ground beef

    • 2 tablespoon olive oil

    • 1 cup each chopped onion + celery + carrots

    • 2 garlic cloves, minced

    • 2 tablespoons tomato paste

    • 1 (28-ounce) can crushed tomatoes

    • 4 cups beef or chicken broth

    • 1 teaspoon Italian seasoning

    • Salt and pepper, to taste

    • 1 (16-ounce) package potato gnocchi

    • 1 cup shredded mozzarella cheese

    • ½ cup grated parmesan cheese

    • ½ cup ricotta cheese (plus more for topping)

    • Fresh basil or parsley, for garnish

Instructions

  1. Sauté the vegetables:
    Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrot, and cook until softened, about 5 minutes. Stir in garlic and cook another minute until fragrant.

  2. Add the beef:
    Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
