  • 2 lbs. Yukon Gold potatoes, cut into chunks
  • 1 cup thinly sliced red onions
  • 1/2 cup capers
  • 1 cup cherry tomatoes cut in half
  • 1 cup pitted kalamata olives (whole or sliced your preference)
  • 1/3 cup chopped Italian parsley
  • 1/3 cup torn fresh basil
  • 1 Tbsp oregano fresh or dried
