  • 1 medium butternut squash (about 2 ½–3 lbs. ), peeled, seeded, and cubed

  1. Roast the Squash.

    Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, garlic, thyme, sage, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, until soft and caramelized. Mash lightly with a fork (leave a few chunks for texture).

  2. Prepare the Cheese Mixture. In a bowl, mix ricotta, egg, ½ cup mozzarella, ¼ cup Parmesan, salt, and pepper.

  3. Assemble the Lasagna. Spread a thin layer of béchamel on the bottom of a 9×13-inch baking dish. Add noodles, a layer of mashed squash, dollops of ricotta mixture, a drizzle of béchamel, and a sprinkle of mozzarella. Repeat layers (about 3 total), finishing with noodles topped with béchamel, mozzarella, and remaining Parmesan.

  4. Bake. Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 15–20 minutes until golden and bubbling. Let rest for 10 minutes before slicing.

It’s no surprise most Italian restaurants have risotto on their menu, it seems too complicated for the home cook. Am here to tell you it’s not complicated at all. This creamy  butternut squash risotto with arborio  was a restaurant menu favorite, it’s easy to make, uses few ingredients and it’s delicious.

Risotto is a classic Northern Italian rice dish slowly cooked in broth until it becomes rich and creamy. The broth can be made from meat, fish, or vegetables—I used chicken broth, but if you’re vegetarian, vegetable stock works just as well.

Creamy Butternut Squash Risotto is a comforting Italian-inspired dish made with creamy roasted butternut squash, Arborio rice, Parmesan cheese, and a touch of fresh herbs. The slow addition of warm broth creates the signature creamy texture of a classic risotto—perfect for a cozy fall or winter meal.

  • 2 cups Italian short grain rice
  • 1 small butternut squash (peeled seeded and cubed)
  • 2 Tbsp. olive oil + 2 tablespoons butter
  • 1/2 cup minced shallots
  • 1 Tablespoons minced garlic
  • 2 cups chopped spinach
  • 4 cups chicken stock
  • 1 cup white wine
  • 1 cup crumbled gorgonzola cheese
  • 1 cup grated parmesan
  • 2 tablespoons chopped Italian parsley
  • 1/2 cup pine nuts
  • salt and pepper to taste
  1. Peel and cut butternut squash into cubes drizzle with olive oil, salt and pepper roast in a 375 degree oven for 30 minutes
  2. Mean while heat chicken stock keep warm, in a deep saute pan heat the butter and olive oil, add onion and garlic, saute until translucent,
  3. Add the rice cook until golden, salt and pepper to taste, add hot chicken stock slowly and a little at a time waiting until the stock is absorbed before adding more while stirring continuously, Continue adding the broth until all is used
  4. Cook until risotto is firm to the bite cooked about 20 minutes. Add parmesan cheese, roasted butternut squash,
  5. Add the gorgonzola and more broth if the sauce is to thick. Top with Italian parsley, more gorgonzola and toasted pine nuts….ENJOY!!

These Italian crispy roasted potatoes are straight from my mother’s kitchen. She’d parboil them, toss with olive oil, garlic, rosemary, and a little lemon, then roast until golden and crunchy. Simple, comforting, and always the first thing to disappear at the table — I still make them just the way she did. To this day, whenever I make them, the smell that fills my kitchen instantly takes me back to her cooking, and I can’t help but smile. This recipe is her original method, and it’s one I know you’ll want to keep on repeat in your own home.

  • Parboiling is key: Cooking the potatoes halfway before roasting helps give them a fluffy inside and that golden, crisp crust.

  • Rough edges = more crunch: Shaking the potatoes after draining creates little ridges that crisp up beautifully in the oven.

  • Use the right potato: Yukon Golds give a buttery texture, while Russets crisp up with an extra crunch — both work well.

These Italian Crispy Roasted Potatoes are golden brown on the outside, fluffy on the inside, and seasoned with garlic, Parmesan cheese, fresh herbs, and olive oil. They're an easy Italian-inspired side dish that pairs perfectly with chicken, steak, pork, or seafood.

  • 2 lbs. Yukon Gold or Russet potatoes (peeled and cut into wedges)
  • 1/2 cup extra virgin olive oil
  • 2 minced garlic cloves
  • 2 sprigs fresh rosemary (or 1 tsp dried)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • salt and pepper to taste
  1. Parboil the potatoes:

    Bring a large pot of salted water to a boil.

    Add potato wedges and cook for 5-7 minutes, until just fork-tender but not falling apart.

    Drain well and let steam dry for 2 minutes.

  2. Rough up the edges:

    Shake the colander gently to create a slightly rough surface on the potatoes. This helps them crisp in the oven.

  3. Season the potatoes:

    Preheat oven to 425°F (220°C).

    In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, lemon zest, salt, and pepper until evenly coated.

  4. Roast:

    Spread the potatoes in a single layer on a parchment-lined baking sheet.

    Roast for 35–45 minutes, flipping halfway, until deeply golden and crisp.

  5. Finish with lemon:

    Remove garlic cloves and rosemary sprigs.

    Squeeze fresh lemon juice over the potatoes just before serving.

Let it rest: Don’t skip this simple step. Let the tomato mixture sit at room temperature for 15–30 minutes before tossing it with the pasta. This gives the garlic, basil, olive oil, and tomatoes time to meld together.

Choose a good olive oil: With so few ingredients, the flavor of your extra-virgin olive oil really matters. Use one that is fruity and flavorful rather than a neutral oil.

Adjust the flavor: Sugo Crudo is easy to customize. Add a pinch of red pepper flakes for a little heat or a bit more garlic if you love a stronger garlic flavor.

Sugo Crudo is a classic Italian raw tomato sauce made with ripe summer tomatoes, fresh basil, garlic, and extra virgin olive oil. Tossed with hot pasta, the heat gently warms the sauce, creating a light, vibrant dish that's bursting with fresh flavor. This authentic Italian recipe is quick, easy, and perfect for making the most of tomato season.

  • 2 pounds ripe tomatoes (heirloom, cherry, or San Marzano)
  • 1 cup extra virgin olive oil
  • 2 cloves garlic (finely minced)
  • ½ cup fresh basil leaves (torn)
  • 1 teaspoon salt (plus more for pasta water)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 12 oz. pasta (your favorite short pasta shape)
  • 1 cup mozzarella pearls or balls cut in half
  1. Prepare the tomatoes

When our peach tree bursts into sweet, golden fruit each summer, I can’t resist finding new ways to enjoy them. This  Peach  caprese salad with Fresh Mozzarella is my Italian-inspired twist on a caprese, swapping tomatoes for juicy peaches kissed by the grill. You don’t need your own peach tree to make it — just ripe, fragrant peaches from the market will do. The smoky char, creamy mozzarella, fragrant basil, and a drizzle of honey-balsamic-herb dressing make every bite taste like summer at its peak.

Things to know about this Peach Caprese Salad with Fresh Mozzarella

  • Peach selection matters. Choose peaches that are ripe but still firm so they hold their shape on the grill without turning mushy. If peaches are too soft, grilling will make them fall apart.

  • No peach tree needed! Even if you don’t have a backyard orchard like I do, fresh market peaches work beautifully for this recipe.

  • Grill carefully. High heat is key for those beautiful char marks and smoky flavor, but keep an eye on the peaches so they don’t overcook. Two to three minutes per side usually does the trick.

  • Mozzarella or burrata? Burrata adds extra creaminess and luxury, but fresh mozzarella is delicious, more affordable, and widely available.

  • Customize the dressing. The honey-balsamic-herb dressing is sweet and tangy, but you can swap herbs to suit your taste — rosemary or basil would be lovely additions.

  • 1 medium head cauliflower
  • 1 cup all-purpose flour
  • 1/3 cup cornstarch (for extra crispiness)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • salt and pepper to taste
  • 1 cup cold sparkling water (or more, as needed)
  • Optional: pinch of cayenne pepper or chili flakes for heat

  1. Prep the cauliflower:
  2. Cut 1 medium head of cauliflower into florets. Rinse and pat dry thoroughly.

Roasted zucchini panzanella salad combines caramelized zucchini, toasted bread, fresh herbs, and seasonal vegetables in a classic Tuscan-style bread salad. A rustic Italian recipe that is perfect for summer gatherings or a light meal.

  • 2 medium zucchini (sliced into cubed)
  • 2 cups crusty bread (cubed (day-old or toasted))
  • 2 cups cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup fresh basil leaves (torn)
  • 2 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil (divided)
  • 2 teaspoon each garlic powder and paprika
  • Salt and freshly cracked black pepper (to taste)
  • 1 garlic clove (minced (for vinaigrette))
  • Optional: shaved Parmigiano or crumbled feta for serving
  1. Preheat the oven to 425°F (220°C).
  2. Season the zucchini: Toss sliced zucchini with 2 tablespoons olive oil, garlic powder, paprika, salt, and black pepper. Spread on a parchment-lined baking sheet in a single layer.
  3. Roast for 20–25 minutes, flipping once, until golden and slightly crisp around the edges. Let cool slightly.
  4. Toast the bread: While the zucchini roasts, toss cubed bread with a drizzle of olive oil and toast in the oven for 10–15 minutes, until golden and crunchy.
  5. Make the vinaigrette: In a small bowl, whisk together red wine vinegar, 2 tablespoons olive oil, minced garlic (if using), a pinch of salt, and pepper.
  6. Assemble the salad: In a large bowl, combine roasted zucchini, toasted bread, halved cherry tomatoes, red onion, and basil. Drizzle with vinaigrette and toss gently.

This rustic roasted pepper salad takes me right back to my childhood summers—watching my family roast peppers over the open flame,  Tossed with briny olives and tender spinach, it’s simple, fresh, and exactly the kind of dish that always showed up on the table when the garden was overflowing.

My mother used to pick the peppers straight from our garden—red, green, and sometimes the pale yellow ones that turned sweet in the late summer sun. She’d roast them right on the stovetop until the skins blistered, then peel and marinate them with olive oil, garlic, and whatever fresh herbs were on hand. This roasted pepper salad, now with baby spinach, olives, and tomatoes, brings all those flavors rushing back. It’s rustic, vibrant, and full of the warmth of those simple garden days.

Use a mix of peppers – Red peppers are sweet and mellow, green have a slightly bitter edge, and yellow or orange add brightness. The mix gives great balance.

  • 2 red bell peppers
  • 2 green bell peppers
  • 1 cup cherry tomatoes (halved)
  • 1/3 cup Italian black olives (or kalamata, pitted)
  • 2 cups baby spinach (lightly packed)
  • 1 cup fresh mozzarella balls sliced
  • 1 small garlic clove (finely minced)
  • 3 -4 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or fresh lemon juice
  • Handful of chopped fresh parsley
  • Salt and black pepper (to taste)
  • Optional: a pinch of dried oregano or torn fresh basil leaves
  1. Roast the peppers: Char the red and green bell peppers on an open flame, grill, or under a broiler until the skins blister. Place in a covered bowl or bag to steam for 10 minutes, then peel off the skins, remove seeds, and slice into strips.

  2. Assemble the salad: In a large bowl, add the roasted pepper strips, cherry tomatoes, mozzarella, olives, and baby spinach.

  3. Make the dressing: In a small bowl, whisk together olive oil, vinegar or lemon juice, garlic, salt, and pepper.

  4. Toss & rest: Pour the dressing over the salad and toss gently until the spinach is just wilted and everything is coated. Let sit for 15–20 minutes so the flavors can meld.

  5. Finish: Sprinkle with chopped parsley and a touch of oregano or fresh basil, if using. Serve at room temperature or lightly chilled.

Caprese Spaghetti with Roasted Tomato Sauce

  • 12 oz. spaghetti
  • 1-1 ½ lb. Roma tomatoes
  • 1 medium size garlic bulb cut in half
  • 3 Tbsp. olive oil
  • 2 Teaspoon dry oregano
  • 1 cup fresh mozzarella
  • ½ cup torn basil leaves
  • salt and pepper to taste
  1. Cook the paste in boiling salted water el dente. Reserve 2 cups of the pasta water before draining
  2. Wash and dry the tomatoes then cut them in quarters.
  3. Place the tomatoes in a bowl season with the olive oil, oregano, salt and pepper. Then transfer to an oven proof dish. Nestle the sliced garlic halves in with the tomatoes, drizzle with olive oil .
  4. Roast in a per heated 400 degree oven for 20 -30 minutes. or until the tomatoes are charred and the garlic is soft. Let cool slightly then Squeeze the garlic onto the tomatoes Use an emersion blender or food processor to blend the tomatoes and garlic to a smooth consistency. Transfer to a saute pan bring to a simmer add the fresh mozzarella. and pasta water cook 5 minutes longer .
  5. Toss the pasta in the roasted tomato sauce add the basil leaves. ENJOY!!
