These crepes were a customer favorite at the two diners my husband and I owned, so I’ve made—and eaten—more crepes than I can count! While my recipe has stayed exactly the same over the years, my method has become much simpler. In the restaurant, we mixed large batches of batter by hand in oversized bowls because we went through so many crepes every day. At home, there’s no need for all that work. Simply add all the ingredients to a blender, blend until silky smooth, and let the batter rest. That’s it!

Whether you’re serving them for breakfast, brunch, dessert, or even dinner, these foolproof homemade crepes are easy enough for beginners and delicious enough to impress your family and guests. Once you make them from scratch, you’ll wonder why you ever thought crepes were difficult.

Don’t worry if your first crepe doesn’t turn out perfectly. In the restaurant, we always joked that the first crepe belongs to the cook! The most common reason? The pan isn’t hot enough when the batter hits the surface.

For the best results, preheat your pan over medium-high heat. Add the butter, let it melt, then give the pan another 30–60 seconds to come back up to temperature before pouring in the batter. That little extra time helps create a beautifully thin, evenly cooked first crepe. Or, if you happen to “accidentally” mess up the first one, consider it the cook’s reward!

The consistency of the batter is just as important as the heat of the pan. It should be silky smooth and pourable, similar to the consistency of heavy cream. If the batter is too thick, the crepes will be dense and difficult to spread. If it’s too thin, they may tear

or cook unevenly.

To achieve the perfect texture, blend the ingredients thoroughly until smooth, then let the batter rest for at least one hour. This allows the flour to fully absorb the liquid and gives the gluten time to relax, resulting in tender, delicate crepes. If the batter seems too thick after resting, whisk in 1 to 2 tablespoons of milk or water at a time until it flows easily while still lightly coating the back of a spoon.

Making crepes may take a little practice, but once you get the batter and pan temperature just right, you’ll be flipping beautiful crepes with confidence. How To Make Homemade Italian Crepes for Manicotti

These homemade Italian crepes are thin, tender, and delicate, making them perfect for filling and rolling into classic Italian manicotti. Made with a simple batter of everyday ingredients, they are cooked quickly in a skillet and provide a light, tender wrapper for ricotta, spinach, cheese, or your favorite manicotti filling.

  • 3 eggs
  • 1/3 cup sugar for sweet crepes
  • 1 1/3 cup milk
  • 3 Tbsp. melted butter
  • 1 teaspoon vanilla
  • scant 1 cup of flour
  • pinch of salt
  1. Add the eggs, milk, melted butter, flour, vanilla, and sugar (only if making sweet crepes—omit the sugar for savory crepes) to a blender. Blend until the batter is completely smooth, about 2–3 minutes.

  2. Transfer the batter to a bowl, cover, and refrigerate for at least 1 hour or up to 2 days. Resting the batter helps create tender, delicate crepes.
  3. Heat a 9-inch nonstick skillet over medium-high heat. Add 1 teaspoon of butter and swirl to coat the pan.
  4. Give the batter a quick whisk, then pour ¼ cup into the center of the skillet. Immediately tilt and rotate the pan so the batter spreads into a thin, even circle.
  5. Cook for about 1 minute, or until the top is set and the underside is lightly golden. Carefully flip the crepe and cook for another minute, until the second side is lightly golden and cooked through.
  6. Transfer the crepe to a plate and fold it into quarters. Repeat with the remaining batter, adding a little more butter to the skillet as needed, until you have about 8 crepes.
  7. Serve warm with fresh berries and a dusting of confectioners’ sugar, or fill with your favorite sweet or savory fillings.

This delicious meal takes traditional spaghetti and turns it into a savory pie. Spaghetti pie, often made with a filling of cooked pasta, cheese, eggs and sometimes cured meats is a dish that many Italian -Catholic families traditionally prepare and eat around Easter.

The pie is often made on the day before Easter and served at noon to signify the end of Lent and the breaking of the fast. I usually make this spaghetti pie each year as it is a family traditional .

Here are three variations Of spaghetti frittata Easter pie, based on regional traditions.

  1. Neapolitan: A classic from Naples, this version is often made with leftover pasta and a mix of Pecorino Romano and parmesan. Some families add a touch of tomato sauce for color and extra flavor.
  2. Southern Italy : In Calabria and Sicily, this dish might include a mix of cured meats like soppressata , capicola, along with a generous amount of cheeses . I am using this version in this recipe.
  3. Ricotta and sausage Easter pie: A richer version found  in some Italian -American kitchens, this variation swaps salami for crumbled Italian sausage and adds ricotta cheese for a creamier texture.

A traditional Italian-style spaghetti frittata made with leftover pasta, eggs, Parmesan or Pecorino Romano, and seasonings, then cooked until golden and set. This rustic Easter favorite is simple, satisfying, and perfect for breakfast, brunch, lunch, or using up leftover spaghetti.

  • 12 oz. cooked spaghetti
  • 4 large eggs
  • 1/2 cup grated pecorino Romano or parmesan
  • 1 cup shredded mozzarella
  • 1 cup diced provolone
  • 1 cup diced salami
  • 1/4 cup chopped Italian parsley
  • salt and pepper to taste
  • 2 Tbsp. olive oil
  1. Start by cooking the pasta al dente in boiling salted water, drain and let cool slightly.

  2. In a large bowl whisk the eggs then add in the rest of the ingredients, spaghetti mozzarella, parmesan, provolone, parsley and salami. Salt and pepper to taste. Mix until well combined.
  3. In a 10 inch saute pan over medium high heat add the 2 Tablespoons of olive oil. When the oil is hot add the spaghetti mixture, cover, lower the heat to low cook for 10-12 minutes or until golden brown. Put a plate over the skillet and flip the pasta pie , slide it back into the pan cover and cook 10 minutes remove the cover the last 5 minutes.
  4. Let rest before slicing. Can be served at room temperature or hot.

Meat stuffed eggplant rollatini or Involtini di Melanzane are delicious. They are made with thinly sliced eggplant that is pre- baked before being filled with an easy meatball mixture. Then they are rolled up laid on a bed of my easy marinara sauce and baked. If you don’t like eggplant , I have to tell you my Husband, Joe does not like eggplant either. Yet , he ate a plate -full of eggplant rollatini. With delicious layers of baked eggplant  and  savory ground beef in a a garlicky tomato sauce- this Italian baked eggplant dish tastes like a restaurant quality meal.

This recipe is a little different than the traditional Italian method. Instead of coating the eggplant with flour and pan-frying before rolling then up and baking, the eggplant slices are baked rater then fried without any flour. The results are delicious and may surprise some used to the traditional way.

The number one question about this meat stuffed eggplant rollatini recipe is : To peel or not to peel the eggplant?  That is a personal preference,  but if the eggplants are large the skin is usually tougher than the the skin of smaller eggplants and should be peeled. If you prefer you can zebra peel them like I did in this recipe.

To make this recipe more manage the prep can be done in steps or even a day ahead of time. You can make my easy marinara sauce and the filling mixture the day before and keep covered in the fridge until your ready to assemble the eggplant rolls. The eggplant can even be baked ahead of time. With a prep plan in place this meat stuffed eggplant rollatini recipe can be on your table in not time.

Tender slices of eggplant are roasted or lightly fried, then filled with a savory Italian meat and cheese filling, rolled, and baked in tomato sauce until bubbling and golden. This comforting Italian-inspired dish is hearty enough for a main course and makes a beautiful family-style dinner.

  • 2 medium eggplants peeled and sliced thin vertically
  • 1 Lb. lean ground beef
  • 1 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1/2 cup chopped Italian parsley
  • Salt and pepper to taste
  • 4 cups my easy marinara sauce
  1. Preheat your oven to 375 degrees

  2. Prepare The eggplant: Start by peeling the eggplant, then slice thin on the long side. Sprinkle with salt and let sit in a colander weighted down to extract the bitter liquid. Pat dry drizzle with olive oil and bake on a baking sheet for 10-15 minutes or until soft .
  3. Prepare the filling: in a bowl mix the ground beef, breadcrumbs, parmesan, egg and the parsley salt and pepper to taste and mix until well combined.
  4. Assemble the Eggplant rollatini: Place a tablespoon of the filling in the center of each eggplant slice. Roll them up jelly roll style. Line an oven proof casserole dish with 2 cups of my easy marinara, stand the eggplant rolls in the casserole dish, then top with the remaining marinara. Top with grated parmesan and bake for 30-35 minutes or until the filling is cooked through.
  5. To serve: Line a dinner plate with marinara sauce stand the eggplant rolls on top of the sauce , top with additional sauce and Italian parsley.

This classic baked Italian stuffed pepper recipe is the kind of comforting dish I grew up eating. Stuffed bell peppers are the perfect easy to make dinner that can be made inexpensively, and always a crowd pleaser. The thick succulent skin and hollow insides of peppers make them ideal for stuffing and baking with all different ingredients and combinations.

Stuffed peppers are one of my favorite ways to use leftovers. They’re like an edible vessel for whatever you have on hand—rice, other grains, meat, beans, vegetables, and sauce can all come together to make a delicious, satisfying meal. In my house, stuffed peppers were often made because we had leftover rice that needed a new life.

The great thing about stuffed peppers is how easy they are to customize. You can swap the rice for couscous or quinoa, use ground beef, leftover roast chicken, or leave the meat out altogether. For a vegetarian version, add your favorite beans instead. Some stuffed pepper recipes call for cutting off the tops and using them as lids, but I prefer slicing the peppers in half. They’re easier to eat this way, and I love seeing all that cheesy filling bubbling on top.

For this recipe, I used a combination of white and brown rice. If you don’t have leftover rice, simply cook it according to the package directions. Precooked rice works perfectly, too.

  • 6 large bell peppers
  • 2 Tbsp. olive oil + 1 Tbsp. to coat the peppers before pre- roasting
  • 1 cup chopped onion
  • 2 Tbsp. minced garlic
  • 4 cups marinara sauce
  • 2 cups chicken or vegetable stock
  • 1/2 lb. lean ground beef
  • 1 cup uncooked white rice
  • 1 cup chopped spinach
  • 1 egg
  • 1 cup grated parmesan more to top the peppers
  • 1 cup shredded mozzarella
  • 1/3 cup chopped Italian parsley
  • salt and pepper to taste
  1. Preheat oven to 375 degrees

  2. Rub the bell peppers with olive oil, salt and pepper. Roast in a 375 degree oven for 10- 15 minutes or until slightly soft.
  3. In a deep saute pan in 2 Tbsp. of olive oil, over medium high heat saute the onion and garlic until soft and jut beginning to brown. Add the ground beef and cook until the meat is brown. Then add the rice, stock and half of the marinara simmer for 10 minutes.
  4. Remove from the fire and add the spinach, parsley, grated parmesan, egg and salt and pepper to taste. Mix well divide the filling among the 12 pre roasted bell pepper halves. Top with the remaining marinara, shredded mozzarella more grated parmesan . and bake in a preheated 375-degree oven for 45 minutes. Top with chopped Italian parsley.

  • 2 Tbsp. olive oil
  • 4 links Italian sausage mild or spicy or a combination of both
  • 1 red and 1 green cleaned and sliced into thin strips
  • 1 thinly sliced onion
  • 1 Tbsp. minced garlic

  • 1/2 cup balsamic vinegar
  • Salt and pepper to taste

  3. You can slice the sausage into thick pieces or leave it whole, then return it back to the pan . Add the garlic, and balsamic vinegar and stir everything together. Cook for an additional 15-20 minutes until the sausage is fully cooked through and the flavors are well combined.

  4. Season with salt and pepper to taste. Top with fresh Italian parsley, if desired.

  • 4 cups orzo

  3. Finish with a squeeze of lemon juice and the Italian parsley.

  • 12 0 z. rigatoni Pasta
  • 1 medium eggplant cut into medium dice
  • 2 Tbsp. olive oil
  • 1 cup chopped onions

  • 1 cup pasta water
  • 1 cup chopped celery
  • 1/2 cup red wine vinegar

  • 1 medium eggplant cut into medium dice
  • 2 Tbsp. olive oil + 2 cups for frying the eggplant
  • 1 cup chopped onions
  • 1 tbsp. minced garlic
  • 4 cups chopped tomatoes
  • 1 cup my easy marinara sauce
  • 1 cup chopped celery
  • 1 cup kalamata olives
  • 1/2 cup red wine vinegar
  • 2 Tbsp. sugar
  • 2 Tbsp. capers
  • 1/2 cup pine nuts
  • 1/2 cup torn basil leaves
  • salt and pepper to taste
  1. In a large saute pan over medium high heat add the frying oil add the diced eggplant and fry until golden . Remove and set aside on paper towels. Remove the frying oil from the pan and add the 2 Tablespoons of the olive oil/ lower the heat

  2. Add the onions and garlic cook until soft and translucent
  3. Add the tomatoes and cook until the tomatoes burst.
  4. mix the sugar with the vinegar and add to the tomato mixture along with the marinara sauce let it simmer for 15- 20 minutes. Then add the fried eggplant, olives and capers simmer an additional 5 minutes.
  5. Add in the basil.

Classic Italian Vegetarian Stuffed Artichokes

Tender artichokes stuffed with a simple Italian mixture of seasoned breadcrumbs, garlic, parsley, Parmesan cheese, and olive oil, then baked until golden and tender. A classic vegetarian Italian side dish that makes the most of fresh artichokes.

  • 2 large artichokes
  • juice from 1 lemon + 1 for serving
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 minced garlic cloves
  • 1/4 cup fresh chopped Italian parsley
  • 1 Tbsp. hot pepper flakes
  • 1/2 cup olive oil
  • 2 cups water
  • Salt and pepper to taste

Prepare the Artichokes:

  1. Fill a large bowl with water and squeeze in the lemon juice

  2. Trim the artichokes by cutting off the stems and the top inch of the leaves.
  3. Use kitchen shears to snip off the pointy tips of the remaining leaves.
  4. Gently spread the leaves apart to make room for the stuffing.
  5. Place the artichokes in the lemon water to prevent browning.

Make the Filling:

  1. In a large bowl, combine the breadcrumbs, Parmesan cheese, minced garlic, parsley, salt, pepper, and red pepper flakes.
  2. Drizzle in the olive oil and mix until the breadcrumbs are evenly coated and slightly moist.

Stuff the Artichokes:

  1. Drain the artichokes and pat them dry.

  2. Spoon the breadcrumb mixture into the center and between the leaves. Pack the stuffing in gently, but don’t overfill.

  1. Place the stuffed artichokes in a large pot or Dutch oven.
  2. Pour the broth into the bottom of the pot to about 1 inch deep.
  3. Drizzle a little olive oil over the tops.
  4. Cover and simmer on low heat for 40- 50 minutes, adding more broth if needed. The artichokes are done when the leaves pull away easily.

Serve:

  1. Serve warm with extra Parmesan, lemon juice and a drizzle of olive oil.

Italian Dover Sole in Lemon Wine Sauce

Italian Dover Sole in Lemon Wine Sauce is a classic Italian-style seafood dish featuring delicate Dover sole fillets gently pan-seared and finished in a bright, silky lemon-white-wine butter sauce. It’s elegant enough for a special dinner but simple enough for a weeknight meal.

  • 4 thin dover sole fillets about 1 1/2 lbs.
  • 1 cup flour for coating
  • 4 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • the juice from 2 lemons
  • 3 Tbsp. chopped Italian parsley
  • lemon slices for serving
  1. Rinse the dover sole fillets and pat dry with paper towels. Season both sides of the fish with salt and pepper to taste

  2. Place the flour on a plate and lightly coat each fillet shaking off excess.
  3. In a large skillet, heat 2 Tbsp. of butter and the olive oil over medium high heat.
  4. Once the butter is melted and foamy, add the fillets. Cook for 3-4 minutes on one side until golden brown, then carefully flip and cook for another 2-3 minutes.
  5. Remove the fish from the pan and set aside on a warm plate.
  6. MAKE THE SAUCE: Add the wine to the same pan, scraping up any browned bites from the bottom of the pan. Let it simmer for 2-3 minutes until slightly reduced. Stir in the chicken stock and continue cooking for another 3-4 minutes.
  7. Add the remaining butter and lemon juice to the skillet whisking until the sauce is glossy.
  8. Return the fish to the skillet just to heat through, spooning the sauce over the fillets.
  9. Sprinkle with the Italian parsley. Serve with lemon slices.
