There’s something about Chicken Marbella that feels effortlessly elegant, even though it couldn’t be easier to make. I first tasted it years ago at a dinner party and was immediately hooked by the sweet-and-savory flavors—tangy capers and green olives, sweet prunes, and tender chicken all bathing in a garlicky wine sauce. This version is an Italian take on the classic, with a few tweaks to bring out even more bold, Mediterranean flavors.

This version is a smaller batch, perfect for a cozy dinner or a little something special without all the fuss. I use a mix of bone-in chicken breasts and thighs for rich flavor and juicy texture. The overnight marinade does all the heavy lifting, and the oven does the rest. Serve it with crusty bread to soak up every drop of that incredible sauce, and you’ve got a dish that feels fancy without trying too hard.

  1. Marinating is key in this chicken recipe, the dish gets it’s signature flavor from a long marinade. Give it at least4 hours, but overnight is better for deep , rich flavor.

Mediterranean Oven Baked Chicken

Mediterranean Oven Baked bone-in Chicken is an easy, flavorful dinner made with tender chicken, fresh Mediterranean-inspired ingredients, and aromatic herbs. Everything comes together in one pan for a simple, satisfying meal with minimal cleanup.

  • 2 bone-in skin-on chicken breasts
  • 2 bone-in skin-on chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons dried oregano
  • Salt & freshly ground black pepper (to taste)
  • 1/3 cup pitted prunes (roughly chopped if large)
  • 1/4 cup pitted Spanish green olives
  • 2 tablespoons capers with a bit of brine
  • 2 bay leaves
  • 1/3 cup dry white wine
  • 2 tablespoons brown sugar
  • Chopped parsley (for garnish)
  1. Marinate the Chicken (do this the night before if you can): In a bowl or zip-top bag, combine garlic, vinegar, olive oil, oregano, salt, pepper, prunes, olives, capers, and bay leaves. Add chicken and toss to coat. Cover and marinate in the fridge overnight or at least 4 hours.
  2. Bake: Preheat oven to 375°F (190°C). Place chicken in a baking dish in a single layer. Pour all the marinade over it. Sprinkle brown sugar over the chicken, then pour in the white wine.
  3. Roast: Roast uncovered for 50–60 minutes, basting occasionally with the pan juices. The chicken is done when golden and its internal temp hits 165°F.
  4. Serve: Plate the chicken with spoonfuls of the prunes, olives, and juices. Garnish with chopped parsley.

Helpful things to know about this air fryer parmesan chicken spiedini recipe

When using wooden skewers, make sure to soak them in water for at least 30 minutes before making the recipe. This keeps the wood from burning in the air fryer. Typically, I prefer metal skewers.

If you’re not in the mood for chicken thighs or prefer chicken breast this recipe works for both. And if you’re not in the mood for chicken at all, this recipe would also be delicious with beef, pork, or shrimp. The cooking times will be different, so you’ll need to experiment to get the exact cooking time.

No air fryer ? No problem . These chicken spiedini can be oven-baked or grilled. Either way , you’ll still get that delicious juicy inside and lightly crisp outside, perfect for any time of the  year.

One of the best things about this recipe is that you can make it ahead of time. Simply assemble the the chicken skewers, cover and refrigerate them up to 1 day or when you’re ready to cook. Air Fryer Parmesan Chicken Spiedini are tender chicken skewers coated with Parmesan and Italian-seasoned breadcrumbs, then air-fried until golden and crisp. An easy Italian-inspired dinner that’s perfect for weeknights or entertaining.

  • 1 1/2 lbs. boneless skinless chicken thighs
  • 2 Tbsp. olive oil
  • 1 Tablespoon each garlic onion, and paprika powder
  • 1 Tbsp. Italian seasoning
  • Juice and zest from one lemon
  • 1/2 cup grated parmesan
  • Salt and pepper to taste

Garlic Parmesan Sauce

  • 1 stick softened butter
  • 2 Tbsp. minced garlic
  • 2 Tbsp. chopped Italian parsley
  • 1/2 cup grated parmesan cheese
  1. Add the chicken pieces to a bowl with the oil, parmesan, lemon juice , zest, Italian seasonings, garlic, onion, and paprika powder. Salt and pepper to taste. Mix to coat evenly. Allow the chicken to marinate in the fridge covered for as little as 30 minutes but ideally overnight.
  2. In a separate bowl combine the butter, minced garlic, parsley, parmesan, lemon juice, and chili flakes. Mix to create a compound butter.
  3. Preheat the air fryer or out door grill I usually air fry the skewers at 400 degrees
  4. Thread chicken pieces onto metal or wooden skewers and set aside. Remember, if using wooden skewers soak in water before using.
  5. Add the skewers to the air fryer a few at a time, so as not to overcrowd the pan and the chicken cooks evenly. Cook 5-6 minutes, flip and cook an additional 3-4 minutes.
  6. The internal temperature of the chicken should be at 150 degrees, at this point baste the chicken skewers with the garlic butter, and cook 1 minute , flip baste the other side and cook 1 more minute.
  7. Top with more parmesan and parsley, serve warm with the parmesan sauce.

Easy Italian Chicken Croquettes

These Easy Italian Chicken Croquettes are crispy on the outside and tender and flavorful inside, made with shredded chicken, Parmesan, herbs, and simple Italian ingredients. Perfect as an appetizer, light lunch, or easy family dinner.

  • 1 Lb. skinless, boneless chicken breast chopped
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/3 cup Italian parsley
  • 1 clove garlic , minced
  • salt and pepper to taste
  • pinch of nutmeg (optional)

For the Bread Coating

  • 1 egg slightly beaten
  • 1 cup breadcrumbs
  • 1/3 cup grated parmesan +
  • 1/3 cup chopped Italian parsley
  • 1 teaspoon garlic (onion, and paprika powder)
  • whisk everything together to blend well
  • 2 cups frying olive oil blend for shallow frying
  1. In a food processor add the chicken breast, breadcrumbs, parmesan, egg , parsley, garlic, nutmeg ( if using), salt and pepper to taste.

  2. Pulse until well combined, but still coarse. The texture should be thick and sticky , like a meatball. If it’s too wet add one or two more tablespoons of breadcrumbs.
  3. Lightly oil your hands, and form about 2 Tbsp. of the chicken mixture into small ovals, or fat finger shapes, about 2 inches long.
  4. Dip each croquette first in the slightly beaten egg and then in the Italian seasoned breadcrumbs. Set aside.
  5. Heat a shallow layer of oil in a heavy skillet over medium heat . Fry the chicken croquettes in batches, turning to brown evenly on all sides (about 6-7 minutes total), or until golden and cooked through.

I make little slits all over the boneless lamb leg and fill them with the garlic and herb butter. Then I spread the same butter all over the lamb, then I let the lamb marinate overnight, before grilling. Grilling is the secret that brings out the lambs natural sweetness while taming it’s unique flavor.

A boneless leg of lamb roast, around 3-5 pounds , is also smaller than a bone -in leg of lamb. However, this recipe works for both bone-in or boneless, so if you go with the bone-in option make sure to extend the cooking time. Lamb, when cooked correctly to an internal temperature of 135 degrees is a gamechanger. Grilled Boneless Leg of Lamb

Grilled Boneless Leg of Lamb is tender, juicy, and full of Mediterranean-inspired flavor. Marinated with garlic, fresh herbs, lemon, and olive oil, then grilled until beautifully charred on the outside and perfectly cooked inside.

  • 3-4 Lb. boneless leg of lamb, tied
  • 4 gloves minced garlic
  • 2 Tbsp. fresh rosemary finely chopped
  • 2 Tbsp. fresh Italian parsley chopped
  • 1/2 stick of softened butter
  • 2 Tbsp. olive oil
  • Salt and freshly ground black pepper to taste
  1. In a small bowl , mix together the softened butter, olive oil minced garlic, chopped rosemary , parsley, salt and pepper to taste

  2. pat the lamb dry with paper towels, Using a small paring knife make slits all over the surface of the lamb. If the lamb is netted make the slits in the openings of the netting.
  3. Fill the slits with the garlic butter, use your fingers to press some of the mixture deep into each slit. Rub the remaining mixture generously all over the outside of the lamb leg to fully coat it. Wrap in foil or plastic wrap and marinate for at least 1 hour or overnight.
  4. Bring the lamb to room temperature before grilling for more consistent cooking
  5. Preheat your gas grill to high heat. Place the lamb on the grill fat side down, and sear 3-4 minutes per side to develop a flavorful crust.
  6. Move the lamb to the cooler indirect side of the grill or lower the heat to medium low.
  7. Continue cooking turning occasionally, until the internal temperature reaches your desired doneness , usually 125- 130 for medium rare 12-15 minutes per pound for rare 18- 20 minutes for medium well done.
  8. It’s important to let the lamb rest for at least minutes before slicing to allow the juices to redistribute.

Tender pieces of Italian-seasoned chicken are threaded onto skewers, coated with seasoned breadcrumbs, and oven-baked until golden and juicy. This easy Italian chicken spiedini recipe is a simple, flavorful dinner that brings classic restaurant-style Italian cooking to your home kitchen.

  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 1/2 Tbsp. red pepper flakes
  • zest and juice from one lemon
  • 1 Tbsp. minced garlic
  • salt and pepper to taste
  • 2 medium skinless, boneless, chicken breast

For the Breading

  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/3 cup grated pecorino
  • 2 Tbsp. chopped Italian parsley

For The Lemon Garlic Butter

  • 1 stick butter
  • 2 Tbsp. finely minced garlic
  • Zest and juice from 1 lemon
  • 2 Tbsp. chopped Italian parsley
  • Salt and pepper to taste
  1. Prepare the chicken: Season the chicken cubes with salt and pepper. Cut the chicken into medium-sized, bite-sized pieces.

  2. Marinate the chicken: In a large bowl, whisk together the olive oil, red pepper flakes, white wine, minced garlic, lemon juice, and lemon zest. Add the chicken pieces and toss until evenly coated. Cover and refrigerate for at least 1 hour to allow the flavors to develop.

  3. If using wooden skewers, soak them in water while the chicken marinates to prevent them from burning. I prefer using metal skewers for this recipe.

  4. Prepare the breadcrumb coating: In a shallow bowl, combine the breadcrumbs, fresh parsley, garlic powder, lemon zest, Parmesan cheese, and Pecorino Romano cheese. Mix well to combine.

  5. Coat and assemble the skewers: Remove the chicken from the marinade and coat each piece thoroughly in the seasoned breadcrumb mixture. Thread several pieces of chicken onto each skewer, leaving a little space between the pieces. Repeat until all the chicken is used.

  6. Bake the chicken spiedini: Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly spray it with olive oil.

  7. Arrange the chicken skewers on the baking sheet and lightly spray the tops with olive oil. Bake for 12–15 minutes, or until the chicken is golden and cooked through.

Grilling Instructions:

  1. Chicken spiedini can also be cooked on the grill for a traditional summertime version. Preheat the grill to high heat and lightly oil the grates. Place the chicken skewers on the grill and cook for about 5 minutes per side, or until the chicken reaches an internal temperature of 165°F.

Make the Lemon Garlic Sauce:

  1. While the chicken is cooking, prepare the sauce. Melt the butter in a small saucepan over medium-low heat. Add the minced garlic and sauté until softened and fragrant.

    Add the white wine and simmer for 2–3 minutes, allowing the sauce to slightly reduce. Remove from the heat and stir in the lemon zest and fresh parsley.

These Italian crepe manicotti with bechamel sauce are made with homemade crepes, filled with a ricotta and spinach filling before being laid on a bed of marinara sauce. Then they are topped with a creamy bechamel sauce and freshly grated mozzarella before being baked to a golden deliciousness.

The crepe recipe is the one I always use they’re soft, light and so easy to work with . Not to mention how easy they are to make. Of course you can use store-bought manicotti shells in this recipe. but why would you when homemade crepes tastes so good and are so easy to make.

Tips for this Italian crepe manicotti with bechamel recipe

A few tips: Let your crepes cool before filling so they don’t tear. Don’t overstuff – just a few spoonful of filling is perfect. A little bechamel goes a long way, just enough to coat the manicotti and bubble up around the edges. You can assemble the whole dish a day ahead and keep it covered in the fridge-just bring it to room temp before baking. It also freezes beautifully, so it’s great for making ahead when you’re feeding a crowd or the holidays.

Delicate homemade crepes are filled with creamy ricotta and spinach, then topped with marinara, silky béchamel, and melted mozzarella before baking until golden and bubbly.

FOR THE FILLING:

  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella divided 1 cup for the filling and 1 cup to top the manicotti before baking.
  • 1/2 cup parmesan cheese
  • 1 medium egg
  • 1 cup blanched spinach or Swiss chard, squeezed dry and chopped
  • salt and pepper to taste

FOR THE EASY BECHAMEL SAUCE

  • 1/2 stick sbutter
  • 1/4 cup flour
  • 2 1/2 cups whole milk
  • pinch of nutmeg
  • salt and pepper to taste
  1. Make the filling. In a bowl mix together ricotta, parmesan cheese, 1 cup of the shredded mozzarellas, egg, spinach or chard. Season with salt and pepper to taste set aside

  2. Prepare the Bechamel sauce. Melt the butter in a saucepan over medium high heatWhisk in the flour and cook 1-2 minutes stirring . Gradually whisk in the milk a little at a time , stirring continually. Cook 5-6 minutes until the bechamel sauce is smooth and thickened. Season with salt and nutmeg.

  3. Assemble the crepes. Preheat your oven to 375-degrees. Place 1-2 generous Tablespoon of the ricotta, spinach filling in the center from end to end of the manicotti. Roll them up like a jelly roll. Repeat with remaining crepes. In an oven proof lasagna pan add the 3 cups of my easy marinara sauce. Place the filled manicotti on top of the red sauce, top with the béchamel sauce. Add the remaining shredded mozzarella and bake covered for 30- 35 minutes . Remove the cover the last 15 minutes.

This delicious Italian spinach pie  torta Pasqualina is made with pastry dough, spinach, or other greens like swiss chard or artichokes, ricotta cheese and eggs. Traditionally, torta Pasqualina was made with Swiss chard. This leafy green was abundant in Italy during the spring and  symbolized the season’s renewal.

Over time , as the dish made it’s way into Italian- American kitchens, the recipe evolved. spinach became a popular substitute- it’s easier to find, milder in flavor, and cooks down perfectly into the creamy filling. Today , both greens are widely used, and many home cooks use what’s seasonal or convenient. You can mix swiss chard and spinach for the best of both greens. Despite the changes the basis of torta Pasqualina remains the same, a flaky pie filled with greens, ricotta and those signature whole eggs inside, symbolizing life and a celebration of renewal.

To make this classic Italian spinach pie more approachable for busy or beginner cooks, you can (like I did) use store-bought pie crust or puff pastry.  The original version used an olive oil dough  and had 33 layers of dough, symbolizing the 33 years of Christ’s life. In today’s home kitchens, you can still honor the spirit of the tradition without all the layers.

Simply roll out the a refrigerated pie crust into a pie pan or spring from pan and press it gently to fit. Add your creamy filling, then crack in your whole eggs, just like the traditional method. You can choose how many eggs to add based on the size of your pie and your preference- some use two , others like me go for four or five. Top with the second  crust, crimp the edges and bake until golden. Using ready-made crust gives you a buttery, flaky texture with minimal fuss- perfect for Easter brunch or weekday prep.

Whether you’re honoring a family tradition or starting a new one, this Italian spinach and ricotta pie brings a slice of Italy to your table.   • 2 Tbsp. chopped Italian parsley
  • 7 eggs 3 mixed into the filling and 4 or more cracked whole into the pie
  • 2 pie crust store bought
  • egg wash for brushing the crust
  • salt and pepper to taste
  1. Sauté the onion and garlic in the 2 Tbsp. of olive oil until soft and translucent, then add the spinach and cook for just a few minutes until wilted. Let cool slightly. Then use your hands to squeeze out as much of the liquid as possible and chop.

  2. In a bowl, mix the add three of the eggs and whisk slightly, add in the ricotta, parmesan, spinach, parsley, nutmeg, salt and pepper to taste
  3. Line a lightly greased pie dish or 8 inch spring form pan with one of the pie crust, fill with the spinach mixture.
  4. Make 4-5 small indentations in the filling using the back of a spoon and crack one egg into each one- don’t stir. These will bake whole inside the pie
  5. Cover with second crust, seal the edges, and cut a few small slits on the top. brush with egg wash .
  6. , Bake in a 375 degree preheated oven for 45-55 minutes, or until golden brown and the filling is set
  7. Let cool slightly before slicing.

When it comes to an Italian -style boneless leg of lamb roast, its’s all about simplicity, quality ingredients and letting the flavor of the lamb be the star. This boneless cut of lamb is ideal for home cooks new to making lamb,  it cooks evenly, carves easily and with the added potatoes and carrots it’s a complete meal !!

If your boneless leg of lamb comes netted or tied, you can roast it as is. The netting helps it hold it’s shape, and cook more evenly. If you prefer to season the inside of the meat, remove the netting rub the garlic herb mixture all over and re-tie it with butchers twine. I didn’t tie mine up this time and it still came out beautifully, but next time I would – just to keep everything a bit neater and hold the shape better while it roast.

Roasted Italian Boneless Leg of Lamb Roast

This Italian Boneless Leg of Lamb Roast is seasoned with garlic, rosemary, olive oil, and classic Italian herbs, then roasted until beautifully browned on the outside and tender and juicy inside. It’s an elegant yet simple Italian-inspired roast perfect for Sunday dinner, Easter, or a special family meal

  • 1 4-5 lbs. boneless leg of lamb
  • 4 gloves minced garlic
  • 2 Tbsp. finely minced rosemary
  • 2 Tbsp. chopped Fresh Italian parsley
  • 1/2 stick room temperature butter
  • 2 Tbsp. olive oil
  • 1 Tbsp. Dijon mustard
  • 2 Lbs. halved baby potatoes
  • 4 peeled carrots cut into chunks
  • 1 onion quartered
  • 1/2 cup white wine or chicken stock
  • salt and pepper to taste
  1. Preheat your oven to 425 degrees. Bring the lamb to room temperature

  2. In a small bowl mix the softened butter, minced garlic, rosemary, parsley, and mustard
  3. Pat the lamb dry with paper towels. Make small slits all over the meat , using a paring knife.
  4. Rub half the garlic butter all over the exterior of the lamb, work the remaining butter mixture into the slits using your fingers.
  5. Toss the potatoes, carrots and onions with the 2 Tbsp. of olive oil in a large roasting pan. salt and pepper to taste.
  6. Place the lamb on top of the vegetables. Roast at 425 degrees for 15 minutes to get a good sear on the meat then lower the heat to 325 and continue roasting. Roast for about 15-20 minutes per pound for medium -rare ( 125 F -130 F internal temperature) or longer if you prefer it more done. A 4.5 Lb. roast typically takes about 1hour 15 minutes to 1 hour and 30 minutes.
  7. Let lamb roast rest 10-15 minutes before slicing
  8. Plate the lamb surround it with the roasted vegetables, pour the pan juices over the top.

This stovetop asparagus with blistered tomatoes and Parmesan is one of my favorite spring and summer side dishes. It’s simple to make, comes together in one pan, and is a favorite in our house, especially when asparagus is in season.

Asparagus has a short growing season, so when it’s available, I like to make the most of it. I didn’t even like asparagus growing up, but somewhere along the way, my taste buds changed. Now I use it in everything from risotto and pasta to frittatas.

For this recipe, cherry tomatoes are blistered in the pan with garlic until they become tender and slightly charred. They’re removed while the asparagus cooks in the same pan until just tender. The warm asparagus is finished with freshly grated Parmesan, then topped with the blistered tomatoes and another generous sprinkle of cheese.

The combination of tender asparagus, sweet blistered tomatoes, garlic, and salty Parmesan makes this an easy and flavorful side dish for just about any spring or summer meal.

Things to know about this Parmesan asparagus with  blistered tomatoes recipe

Look for asparagus stalks that are around the size of your pinky finger for the best results. Skinny asparagus stalks tend to become stringy after cooking and larger ones may require more time to cook. Use ripe cherry or grape tomatoes. Look for ones that are plump and bright in color- we don’t want wrinkled or dull tomatoes they don’t blister as nicely or taste as fresh.

Don’t overcook the asparagus. You want them to be tender but still have a bite. It only needs a few minutes in the pan . especially if you are using the thinner asparagus.

Grate the parmesan fresh . Pre-shredded cheese won’t melt or taste the same. Freshy grated parmesan makes a big difference in flavor.

This Parmesan asparagus with blistered tomatoes is best severed warm or at room temperature. That said leftovers are great on top of toasted bread , for a delicious bruschetta  or tossed into pasta.

Parmesan Asparagus with Blistered Tomatoes is an easy one-pan stovetop side dish made with tender asparagus, garlic, sweet blistered tomatoes, and freshly grated Parmesan cheese. It’s a simple, flavorful way to enjoy fresh asparagus during the spring and summer months.

  • 1 bunch fresh asparagus trimmed
  • 1 pint cherry tomatoes
  • 3 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 1/3 cup white wine
  • 1/2 cup vegetable stock
  • 1 cup freshly grated parmesan cheese
  • fresh basil leaves
  • salt and pepper to taste
  1. Prep the asparagus by trimming off the woody ends

  2. In a medium saute pan over medium high heat in 2 tbsp. olive oil saute the garlic until soft and translucent. Add the tomatoes and cook until blistered, remove. In the same pan add the remaining olive oil. Then add the asparagus, white wine. and the vegetable stock , steam for 7-10 minutes or until the asparagus are cooked but still crisp tender and the liquid has been absorbed.
  3. Top the asparagus with the parmesan cheese. Place the tomato mixture on top of the parmesan, add more cheese on top of the tomatoes, cover and cook just until the cheese melts and the tomatoes are heated through.
  4. Top with fresh basil.

Braised Italian Artichokes alla Romana are as authentic as it gets. Stuffed with breadcrumbs, cheese, garlic, and fresh parsley, they’ve always been a family favorite in our home. Growing up, my mother made them with the artichokes she grew in our garden. Sometimes she stuffed and braised them on their own, and other times she cooked them alongside the fresh fava beans she harvested each spring.

This recipe is a perfect example of traditional Italian cooking, where simple, seasonal ingredients come together to create something truly special. The flavors are humble yet incredibly delicious, proving that good cooking doesn’t have to be complicated.

And while I have fond memories of garden-fresh artichokes, you certainly don’t need to grow your own to make this recipe. Just look for fresh, firm artichokes at your local grocery store or farmers market, and you’ll be well on your way to creating this classic Italian dish at home.

Tips for success when making braised Italian artichokes alla Romana

For this Braised Artichokes alla Romana recipe, the best artichokes to use are the smaller, more tender varieties often called baby artichokes or Italian globe artichokes, if you can find them. Look for artichokes that feel firm and heavy for their size, with tightly packed leaves and no browning or dryness on the tips.

When it comes to cleaning them, don’t be intimidated — it just takes a little patience. Start by snapping off the tough outer leaves near the base until you reach the softer, pale green leaves underneath. Using a sharp knife, trim about an inch off the top of the artichoke, then use a vegetable peeler to remove the tough outer layer from the stem. If the fuzzy choke has developed inside, scoop it out with a spoon, though smaller artichokes may not have much at all. As you work, rub the cut sides with lemon to prevent browning, then place the cleaned artichokes into a bowl of lemon water while you finish the rest.

Once the artichokes are cleaned and stuffed, place them upside down in the pan with the stems facing up so the filling stays tucked inside. Nestle them tightly together, then leave them alone — this part is important. Once they’re in the pan, resist the urge to move them around. Let them slowly braise in the seasoned liquid until perfectly tender.

This recipe is a bit of a labor of love, but the result is absolutely worth it. The artichokes become tender, flavorful, and melt-in-your-mouth delicious. Braised Italian Artichokes Alla Romana

Braised Italian Artichokes, known as Carciofi alla Romana, are a classic Roman dish made with tender artichokes, fresh parsley, garlic, mint, olive oil, and white wine. The artichokes are gently braised until meltingly tender and infused with the flavors of the herbs and garlic. This traditional Italian recipe makes an elegant spring side dish or appetizer.

  • 3-4 medium size globe artichokes
  • 1 lemon
  • 2 thinly sliced garlic cloves
  • 1/2 cup good quality extra virgin olive oil
  • 1 cup white wine
  • 1 cup chicken stock
  • FOR THE FILLING
  • 2 cups breadcrumbs
  • 1/2 cup grated parmesan
  • 1 Tbsp. finely minced garlic
  • 1 Tbsp. olive oil
  • salt and pepper to taste
  1. Fill a large bowl with water and the juice from 1 lemon.

  2. Trim the stems, leaving about 1 inch. Peel the stems with a paring knife. Remove the tough outer leaves until you get to the pale green/yellow tender ones.
  3. Slice off the tough top third of the artichokes.
  4. Gently open the center and remove the tough choke using a spoon( if present)
  5. Use the sliced lemon and rub each artichoke.
  6. Place the cleaned artichokes in the lemon water to prevent browning while making the filling.
  7. MAKE THE FILLING: Mix together the breadcrumbs, garlic, parmesan cheese, parsley and 1-2 Tablespoons of olive oil. Mix until well combined.
  8. Remove the artichokes from the water, pat dry . Place 2 Tablespoons of the filling into the center of each artichoke.
  9. Place the olive oil in a large pot large add the garlic and cook for 1 -2 minutes to infuse the oil. Don’t allow the garlic to brown. Then add the wine and chicken stock. Place the artichokes in the pot stem up and filling side down. (they should fit snugly) and the liquid should come about 1/3 of the way up. If the stems are too tall to allow for the pot to be covered just cut the stems shorter and put them in the pot.
  10. Cover and simmer over low heat for 30-40 minutes or until tender. Serve warm or at room temperature with some of the braising liquid served on top.
